Passion is what drove Maria Spennato, mother to twelve, wife to one. Passion for life, for love, for family, for friends, for food. Her passion carried forward by her youngest son, Egidio Di Paola, Chef and Owner of Spennato's Italian Ristorante. The traditions that Egidio Di Paola grew up with around the quaint village of Monte Cassino, the World War II German stronghold, located between Naples and Rome, were brought with him to the United States, in 1978, after his 6 yr. tour of duty in the Italian Navy. Honor, duty, courage, loyalty and hard work, all things learned from his parents, have stood the test of time, as have the simple yet elegant recipes of his beloved mother, Maria.
